Sautéed Chorizo & Potatoes

Ingredients
1 Tbsp vegetable oil
1 lb chorizo, casings removed
1 small onion, diced
1 lb boiled, small-diced red skinned potatoes
Kosher Salt
Fresh Ground Pepper
Directions
- Heat vegetable oil in a large nonstick skillet over medium heat. Add chorizo and cook, breaking up, until dry and crisp (about 10 minutes).
- Using slotted spoon, transfer chorizo to a paper towel-lined plate.
- Discard all but one tablespoon of oil from pan, and heat again over medium-high heat.
- Add onions and potatoes and saute until brown (10-12 minutes).
- Stir in chorizon and season with a little salt and pepper.
- Transer to a serving bowl.
